| Dear Bali Friends Greetings
from the heart of Tanjung Benoa here in Bali, to all corners of
Indonesia as well as to all the fare away places on our magnificent
beautiful planet.
It is with great pleasure and pride to announce
the birth of latest creation in our search to bring Balinese culinary
and food culture a step closer to anyone interested in experiencing
not only beautiful sights on our island paradise, but also sample
the delicious flavors Balinese cooking has on offer.

Balinese Market Restaurant
Based on the success of Bumbu Bali, Restaurant
& Cooking School, we continued with our efforts to bring Balinese
food another step closer to the interested gourmet traveler and
to people which enjoy sampling the delightful flavors of Bali. Only
a few hundred meters away from Bumbu Bali within Rumah Bali we crafted
in a magnificent Balinese setting a village center where each building
was designed following the principals of ancient Balinese architecture.
We transformed each pavilion into a kitchen or each kitchen into
a restaurant, and as a result while guest enjoy their dinner they
will also be entertained by our market chefs with the preparation
of the many secret recipes. Imagine sitting in the midst of a Balinese
village market and enjoy the best dishes our island has to offer,
and at the same time be confident to sit in a perfectly clean and
save environment. Each pavilion is dedicated to one specific type
of food, and together we will tell you the entire story of food
culture in Bali
Bale Panjang - Spices
Without doubt spices are the most important ingredient in preparing
Bali's delicious cuisine. Here you will find every spice on display
required in preparing Bali's "Bumbus" spice mixes. Jars
of various sizes are filled with all the nutmeg, cloves, peppers,
cinnamons and other selected flavors used in Balinese cooking. Each
spice is labeled with its name and a short explanation of the origin
and main usage is given.
Wantilan – Arakery and Not a Distillery
This traditional cock fighting pavilion has been transformed into
a "Micro Distillery" where we show case the production
of Bali's famous Arak and Brem. While you enjoy the various flavors
of Arak you might witness the traditional way this rather mysterious
palm brandy is distilled.
Bale - Banjar - Vegetables
Here we built three traditional fireplaces where we prepare all
the many vegetable dishes "Jukut", served with every meal
in Bali. On display you will find a large selection of many awkward
looking greens over which one wants to debate whether they belong
into the categories of vegetables or fruits. They look like a fruit,
just like a papaya and are prepared in way we prepare |

vegetables, or then
there are cucumbers which are actually fruits but taste like vegetables.
Bale Gede - Coffee
The smallest of all pavilions is dedicated to coffee, and one can
witness and smell the joy of freshly roasted coffee. Experience
the difference between Bali's Robasta Beans and the world famous
Java Arabica. Here you are surrounded by traditional art effects
used in the harvest and production of coffee in Bali.
Puri - Fruits and Cakes
Approximately 50 types of fruits grow on Bali, and most tourist
places will serve you just about four. Discover that there is a
lot more than just melons, pineapples and papayas. There is a daily
changing display of fruits which we incorporated in the preparation
of the various fruit dishes. Savor Bali's favorite snack the "rujak"
or indulge yourself on a delicious ginger soup.
Kambang - Rice
Here you find on display a large selection of instruments utensils
and art effects required in the production, harvest, and preparation
of rice. Find out all the secrets between the various types and
qualities of rice; black, red, white, glutinous or there respective
flours.
Paon - Main production kitchen
Here all the main dishes are prepared. Select the freshest fish
from our display, which is purchased daily fresh from the Jimbaran
market. Fish, prawns, squid or sates are grilled over coconut husks.
Meats braised in sweet soy or coconut milk, and ducks and chickens
roasted in Banana leaves.
Entertainment
There will by daily entertainment with changing shows every Tuesday,
Thursday and Saturday.
It is our aim to bring in our very own Pasar Malam
Balinese food culture a step closer to the food interested visitor
to Bali. Within our little village you will find every aspect of
food found in Bali. We do not just want to serve you a good Balinese
meal, but also tell you the story on the food in Bali and with it
let you experience and feel a magic part of Bali's incredible culture.
The team in Pasar Malam is looking forward to your
first visit to our latest cultural and culinary creation.
